The Next Level of French Toast

French toast is a classic breakfast food. It isn’t necessarily fancy, but it is easy to dress up and simple to make. I don’t think I’ve met a person yet who doesn’t like French Toast.

The crisp outside and eggy inside, with a drizzle of maple syrup- it’s everything you could want in breakfast. You might think it is already at the peak of perfection, but I’d have to disagree. French Toast can be taken to another level, and this Gluten Free Cookie Crusted French Toast proves it!

Chocolate Chip Cookie Crust

Cookie Crusted French ToastMy families favorite gluten free chocolate chip cookies are Goodie Girl Quinoa Chocolate Chip. They are gluten free (yay for me!), but over that, my family just loves them. My daughter’s eyes light up like a Christmas tree whenever I pull out one of their go packs for a special snack. I watched my husband bypass a ton of goodies I got from the South Beach Food and Wine Festival for these chocolate chip cookies.

My little family would eat the Gluten Free Goodie Girl Quinoa Chocolate Chip Cookies for breakfast, lunch, and dinner, so I thought, why not come up with a fun way that they can eat cookies for breakfast? Making this Cookie Crusted French Toast has been a huge hit!

Making Gluten Free Cookie Crusted French Toast is a lot easier than you think. It is a basic gluten free French Toast recipe, and you press the gluten free bread into smashed cookie crumbs.

There is a trick to it, though:

Instead of cooking it in a pan, bake it on a cooling rack in the oven.Β

If you try to cook it in a pan, you run the risk of all the chocolate chips burning before the egg soaked gluten free bread is cooked.

This is also a fun recipe to get the kids involved. My daughter loved helping crush the cookies. I put them in a Ziploc, gave her one of her play hammers and let her go at it. It’s always great when you can get the kids involved in cooking.

Even with the sweetness from the cookies, I still like a little drizzle of maple syrup on top of my gluten free Cookie Crusted French Toast.

What do you like to eat on French Toast?

  1. This sounds like the perfect thing to serve for Easter brunch. I love making fun new breakfast recipes for the holidays and this certainly fits the bill.

  2. Not also cookie crusted BUT chocolate chip cookie crusted> How incredibly perfect! Love it and it’s gluten free! That’s a huge plus! Perfect for weekend entertainment (if I can wait until the weekend).

  3. Wow – that sounds delicious! Chocolate chip cookies in a french toast bake? Could breakfast get any better? So innovative!

  4. I love that you bake this instead of pan frying it – what a great way to make french toast for a crowd! French toast is always hard for company since you spend so much time standing at the stove, but this totally eliminates that problem.

  5. The best of all worlds! French toast couldn’t get any better than this! My son recently learned to make his own french toast so he will be so excited for a baked version. I make him wash the dishes after he cooks it so baking it will save him some work!

  6. Thanks for the tips..my first French Toast slice is always a) too soggy and under done or b) burnt black as night.
This recipe sounds like something I need to make for brunch pretty soon.

  7. Oh my Oh my…. You got me with chocolate chip cookies crust. That was like mind blowing. NOT only this looks AND sounds amazing and delicious, it’s baked in oven and fat-free. LOVE it! • Baking it definetly helps a bit, but I wouldn’t go as far as completely healthy, gotta through in those cookies for a little bit indulgence!

  8. What a perfect morning Indulgence!! this would be the perfect Sunday brunch recipe. Chocolate chips and buttery French toast combined? Absolutely gorgeous recipe.

  9. This is my kind of breakfast for the weekend when I wake up dreaming of dessert. I bet my whole family would be excited with this idea of breakfast. I am so tempted to eat some right now in spite of just finishing my breakfast.
