Taco Night

One of my favorite things about taco night is the endless possibilities. You can customize your tacos however you like. Chicken, steak, crunchy, with salsa, without salsa….so many ways to eat tacos. I could honestly eat tacos every day. They are my favorite thing to eat.

When we have people over I almost always make tacos because it is so easy for me to adjust for any allergies that may be present. Obviously, anything at my house is gluten free, but I have friends with all kinds of allergies and I don’t want them to be left out.  Recently I even learned to make my own tortillas!

Allergy Friendly Tacos

I love soft pliable flour tortillas, but I have yet to find a premade gluten free version that is exactly what I want, so I learned to make my own! You can use any gluten free flour, but to make them Top 8 allergy free, I used Enjoy Life Foods All Purpose Flour Mix. I like it because not only is it Top 8 (and corn) Free, it also has added protein so I feel good about feeding it to my family.

Instead of using the traditional shortening that is used with four tortillas, I used palm shortening and it worked great! If your not feeling up to making tortillas, you can use premade.

Because I love a little texture, I crusted my chicken in Thai Chili Plentils. Even if you hate tacos (which is crazy, but you may!), you need to try crusting chicken with plentils. The chicken almost didn’t even make it to the tacos because my two-year-old kept grabbing for it. I’ve never seen her so excited to eat chicken.

The crunchy chicken tenders are super easy to make. Just a bit of olive oil, roll the chicken in the crushed Thai Chili Plentils and bake- easy peasy.

Now no taco is complete without some kind of tacos. These crunchy Gluten Free Chicken Tacos just begged for something creamy to go on top so I made a quick cilantro aioli. It really adds a punch of flavor (and is great on just about anything!). Lime juice, lots of cilantro and bit of cumin make for a delicious bite. You won’t even miss the cheese!

Aiolis are mayonnaise based and mayonnaise traditionally contains eggs. However, there are quite a few vegan mayos on the market and some that are soy free as well. If you can’t find allergy friendly mayo at your store, try using an avocado in place of it. A little bit different taste, but it will still be creamy and delicious!

Crunchy Gluten Free Tacos {Top 8 Allergen Free}

Ingredients

Crunchy Gluten Free Chicken

  • 1 pound chicken cut into thin strips
  • 1 bag Thai Chili Plentils crushed in a food processor
  • 2 Tablespoons olive oil
  • salt and pepper

Top 8 Free Toritllas

  • 1 cup Enjoy Life Foods Gluten Free All Purpose Flour
  • 3 tablespoons palm shortening
  • 1/2 cup water adjust as needed

Cilantro Aioli

  • 1/2 cup allergy friendly mayo
  • juice of half a lime
  • 1/2 teaspoon cumin
  • 1/4 cup packed cilantro leaves
  • 1/4 teaspoon salt
  • 2 cloves garlic

Instructions

Gluten Free Crunchy Chicken

  • Salt and pepper chicken.
  • Toss in olive oil.
  • Press into crushed plentils.
  • Bake at 350 degrees for 12-15 minutes or until done (depending on thickness of chicken).

Allergy Friendly Tortillas

  • Pulse together flour and salt.
  • Add palm shortening and pulse until a crumbly mixture forms.
  • With food processor on, slowly add water until a ball forms.
  • Divide into four portions.
  • Press into flat circle between to sheets of lightly floured wax paper.
  • Cook on skillet over medium heat for about 45 seconds on each side.

Cilantro Aioli

  • Combine all ingredients in a food processor or magic bullet and puree.

    I like the idea of tacos for when people are over to accommodate various allergies – I’ll definitely use this when I entertain in the future! And these chicken tacos look so delicious!

    I love tacos but have never made my own tortillas — will need to try that! Also I need to get my hands on those Plentils — Love the idea of coating the chicken in them!
