After School Snack Time

Every day when my little one comes home from school, the first thing she asks for is a snack. I’m sure every child is the same way. I like to keep it simple, but fun. Sometimes it’s just a cup full of sliced berries, but other times I cut fruit or cheese into fun shapes. Something about a piece of watermelon being in a heart shape that just makes it taste better!

When I got the new Enjoy Life Chewy Bars, I was so excited to try them. I thought they would be really fun to use to create an after school snack that was also top 8 allergen free, so that no matter which friends were over, everyone could enjoy!

Enjoy Life Chewy BarsOne of the things I love about blogging is being the first to get to try new products. I may have a slight obsession to trying out new products- the grocery store is always a dangerous place for me, anytime I see something new that is gluten free I have to get it. So I’m lucky that occasionally brands will send me new products to try out. Enjoy Life Foods new bars come in 3 flavors-  carrot cake, caramel blondie, and lemon blueberry poppyseed.

I liked the texture of the bars and I find them to be pretty filling, which is great because I always carry food with me. They are perfect for lunch boxes or throwing in your purse. The variety of flavors is great too.

I enjoy the taste of them, of the three, carrot cake is the one I like the best. It actually tasted like carrot cake, which is what gave me the idea for these after school snack bites. I did find them to be on the sweet side and I tend to be a more savory person, so I had a few friends and family who loves sweets try them out and they gave them a thumbs up!

After School Snack Bites

I say after school snack bites- but really they would be great anytime. These would be a lot of fun to even make to take to a class party. They are perfect because they are free of all the top 8 allergens. Schools and allergies can be tricky, but products like Enjoy Life make it a little bit easier to handle packing lunches and snacks.

Recipe Notes

As I mentioned before, the bars are on the sweet side, so I decided to counterbalance that with a bit of dairy free cream cheese. I got the idea when I was eating the carrot cake bars. What goes perfectly with carrot cake?- Cream cheese icing of course! You could totally add a bit of powdered sugar to the cream cheese if you wanted, but I think the bars are sweet enough on their own.

I topped them with Seeds and No Nuts mix (this is probably my favorite Enjoy Life Product!), mini chocolate chips and blueberries. Really you could use whatever your kids like. Be creative!

Easy After School Snack Bites

Ingredients

  • Chewy Granola Bars
  • Dairy Free Cream Cheese
  • Toppings such as mini chocolate chips blueberries, and trail mix

Instructions

  • Cut bars into thirds.
  • Top with cream cheese.
  • Top with desired toppings.
  • Enjoy!

    Such a great idea! Both my boy and I are gluten-free so this is a recipe we will definitely be trying! He loves apple slices with peanut butter for an after school snack but it’ll be nice to try something different! Thank you ?
