Breakfast Time

No one should miss out on breakfast, it’s the most important meal of the day. A solid breakfast can keep you going all day. We eat a lot of dairy free yogurt for breakfast, it’s so easy to just grab from the fridge, but I always feel like it needs a little something. Adding some crunch with a granola is one of my favorite ways to dress it up.

In order to make my yogurt and granola bite sized I decided to use Enjoy Life Foods Seed and Fruit trail mix to create some adorable little gluten free breakfast tarts (that are also top 8 free!). Perfect for a quick little breakfast bite.

Last September I first tried the Enjoy Life Seed and Fruit mix when I was working on my Gluten Free Lunch Post for Back to School. My family fell in love with them. Just the right of sweetness from the dried fruit and crunch from the seeds. You don’t even miss the nuts!

You can buy them in larger bags (perfect for these tarts!) or in smaller travel sized bags that are great for carrying in your bag. Enjoy Life Foods carries to types- Beach Bash and Mountain Mambo. Beach Bash has a tropical fruits like pineapple and banana, whereas Mountain Mambo has dried apples and mini chocolate chip. Both are of course, Top 8 free!

Locally I’ve seen both the big bags and the travel sized bags in Walmart or you can buy them on their website!

These bite-sized breakfast treats are super easy to make and delicious. Gluten Free Breakfast Tarts are everything you want in breakfast, in one cute little bite.

They are perfect for brunches and can easily be made ahead of time. I topped mine with strawberries because that was what was available, but you could use any fruit you like, or even a little drizzle of chocolate would be delicious!

Whip up a bunch of shells at the beginning of the week and fill with your favorite dairy-free yogurt whenever you want a yummy bite. A greek style dairy free yogurt works best because it is a bit thicker.

Because they are Top 8 free, they are great to take to pot luck style brunches or any serve at a family breakfast. Everyone can enjoy them! Don’t forget a Dairy Free drink to go along with them, like this Homemade Strawberry Almond Milk from

Gluten Free Breakfast Tarts with Yogurt & Fruit {Top 8 Free}

Ingredients

  • 1 1/2 cups Enjoy Life Seeds and Fruit Mix 1 Large Bag
  • 3 Tablespoons Dairy Free/ Soy Free Butter Spread melted
  • 3 Tablespoons Brown Sugar
  • Your Favorite Dairy Free Yogurt
  • Fresh Fruit

Instructions

  • Preheat oven to 350.
  • Place Seeds and Fruit Mix, melted spread and brown sugar in food processor.
  • Pulse until well combined.
  • Put 1 tablespoon mixture into each of 12 mini muffin cups. Press in with back of spoon.
  • Bake at 350 for 10-12 minutes.
  • Let cool completely before removing from tins and filling.
  • Fill with dairy free yogurt and top with fruit.

    I had no idea they had no nuts but seed and fruit, its so annoying when I want to eat healthy but everything is contaminated with nut products, thanks for showing me this. I’ll have to see if my local health food stores carry it.

    This is a great breakfast for sure. So healthy and easy to make. I think my husband and kids will enjoy this .

    YUM! I’ve been eating the same ol’ oatmeal and berries every day, I need to switch it up with someone quick and these seem perfect — full of protein so it’ll take me to a mid afternoon snack!

    That’s one of my favorite mixes, Enjoy Life Foods Fruit & Seed. I love how you made those into little “granola” cups. How cute and convenient.

    I have been trying to live more gluten free as gluten really hurts my stomach. I always crave things like this but didn’t know that you could make it gluten free. I will have to try this out!
