The Cupcake Dilemma

Before being diagnosed with Celiac I was never a huge cake person, but after I started craving cupcakes like crazy. I’m guessing this is because I could no longer just go to the store and get one. When I was pregnant it was the worse. I had a huge meltdown one night (pregnancy hormones!) and was so disappointed when all the recipes I found required all kind of ingredients that I didn’t have or couldn’t find.

The search for a good gluten free cupcake was daunting.

There was one cupcake shop at the time that sold a gluten free vegan cupcake, so my husband and I went. They were eh. The cake was dense and the icing way to sweet. While I have since found a couple good gluten free cupcakes in Miami, with the recipe I developed, it is just as easy to make my own. You could even mix up several batches of the dry ingredients for these gluten free chocolate cupcakes and store in ziplocs so you have your own cake mix ready to go at a moments notice!

Recipe Notes

You know I can’t leave you without a couple of recipe notes for these gluten free chocolate cupcakes. It just wouldn’t be fair.

These cupcakes are dairy free (Yay!),

However, I did use cream cheese icing. You can use a dairy free cream cheese and you are good to go!

You can get a sample for only $5.00 or order a starter kit that has all kinds of goodies. Love to bake? Order her flour in bulk!

The key to gluten free baking is an awesome gluten free flour. You can use whatever your favorite Gluten Free Blend is, just avoid bean based for the cupcakes. No one wants to eat a cupcake that tastes like beans.

The Espresso

Feel free to leave out the instant espresso, I just love how it develops a rich, chocolate flavor, but it is optional.

  4. Isn’t it funny how the moment you can’t have something, you want it more than you ever did before! I’m totally like that. Glad you’ve been able to create a delicious chocolate cupcake that you can make at home. It certainly looks delicious!

  5. You had me at Gluten Free, then you had to throw in dairy free too! I’m sold! I’m both so this recipe has my name all over it! And yes, my name is Amanda, too! So this recipe was just meant to be! HA HA! Love it! Thanks for the chance for the entry too!

  6. OK I just informed my husband that I’m now in love with you. Chocolate cake with white icing is my favorite but cream cheese icing! Hello! And if that wasn’t enough, I always say chocolate chips make everything better. Everything! Oh and I love the idea of pre-mixing the dries and storing them as cake mix for later.

  7. These look like little pillows of perfection! I’d probably double the dairy-free creamy cheesy frosting though – for me, cake is just a delivery system for frosting πŸ™‚
