Migraines always come at the most in-opportune times. As a mom, nights out are few and far between. After weeks of looking forward to a Girls Night Movie Marathon, I was just about to make my famous Peanut Brittle Popcorn when I started to see spots. Spots are a tell tale sign that a migraine is coming on. Rather than curl up in bed and miserably text my friends that I wasn’t going to make it, Excedrin® Migraine to rescue. I followed the directions on the box and it wasn’t long before the medicine kicked in and I was back to making Peanut Brittle Popcorn for my much anticipated movie night!

Peanut Brittle Popcorn is easy to make and only needs a few ingredients and a microwave! It works like this.

  1. Combine the sugar and corn syrup.
  2. Microwave for 1 minute.
  3. Add the peanuts, butter, and popcorn.
  4. Microwave for 3 minutes.
  5. Add the baking soda and vanilla.
  6. Spread on a greased baking sheet.
  7. Sprinkle with candies.
  8. Let cool, break apart, and eat!

Super simple- stir, microwave, stir, microwave, pour, and eat! Enjoy!

  • 1 cup sugar
  • ½ cup light corn syrup
  • 2 tablespoons butter
  • 4 cups popped popcorn
  • 1 cup roasted peanuts
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • ¼ cup mini m & m’s

  1. Stir together sugar and corn syrup in large glass bowl.
  2. Microwave for 1 minute.
  3. Stir in butter, popcorn and peanuts.
  4. Microwave for 3-5 minutes, just until sugar begins to caramelize.
  5. Stir in baking soda and vanilla.
  6. Pour onto grease baking sheet or silpat.
  7. Let cool completely.
  8. Break apart and serve!

  2. Popcorn brittle??? I’ve never had or even seen popcorn brittle… yes please! I used to get headaches all the time and Excedrine is my go-to headache stopper 🙂

  5. I’m so sorry that you have to deal with migraines Amanda. My sister has had them, too, for decades, and I know they’re life-altering for her. Perhaps I should make her some of this brittle to go with her Excedrin – that would definitely make her smile!

  6. While I was growing up in India, peanut brittle was my most favorite snack. We don’t see peanut brittles here in the states that much, I think, because of the peanut allergy fear..but everytime I eat it, I’m flooded with my childhood memories.
