Gluten Free Sausage Balls- Cheesy Goodness with Hot Italian First Fresh Chicken Sausage!

I love bite-sized appetizers at parties. They are so much fun and let you get a taste of all kinds of goodies. The first time I heard of sausage balls was only a few years ago, at a baby shower. They looked so yummy and disappeared quickly. At the time I had just been diagnosed with Celiac and wasn’t able to try them. For years now I have been meaning to make a gluten free version.
I had a package of Hot Italian First Fresh Chicken Sausage and Gluten Free South Florida’s Holiday Party coming up so I decided to give them a try. They were a hit! Everyone loved them. Most people had brought sweets, so it was nice to have a protein based appetizer.
For the past 6 months, I have been telling you all about First Fresh Chicken Sausage. It is one of my favorite protein sources. So much flavor, and all white meat cage free chicken. Plus it’s made in a completely gluten-free facility which is amazing. With ingredients you can actually understand, I feel good about feeding it to my family. Plus, it is so much better for you than pork sausage.
They have several different varieties, but the Hot Italian is probably our favorite. It’s great in so many recipes, and while it has a little kick, it isn’t overpowering.
Gluten Free Sausage Balls
These little balls of goodness are so easy to make. The real trick to them is to get in there and get your hands dirty! The mixture has to be mixed my hand to really get the sausage broken apart and all the cheese spread throughout the mixture.
A few ingredient notes:
The cheese: You need 2 and 1/2 cups of cheese. I used a combo of cheddar cheeses and parmesan, but feel free to mix it up! If you don’t have spicy sausage, a bit of pepper jack might be nice!
The baking mix: I used gluten free Bisquick, but I found when I was making my Gluten Free Cheddar Bay Biscuits that they all work pretty similar. Feel free to use King Arthur or Aldi’s or if you have another brand it will most likely work just fine.
The sausage: I used First Fresh Hot Italian Chicken Sausage. If you can’t find First Fresh in your area, you can use any fresh chicken sausage or even pork.
The butter: First Fresh Chicken Sausage is very low in fat. The butter is needed to keep the biscuit mix moist, if you use pork sausage, you can omit the butter.
The milk: I found that 1/3 of a cup was just right, but if your mixture is too crumbly, add an extra splash.
