Holiday Breakfast

When I was growing up we often spent Christmas at my grandparents. I always loved being at their house at Christmas time. It was always so festive. A beautiful Christmas Tree and decorations all over the house. My Granny did a lot of plastic canvas needle work and she had these fun holiday baskets scattered around that were always full of candy. Perfect for sneaking, even when you weren’t supposed to be eating it!

Christmas Eve was always steak and baked potatoes, but Christmas morning we had a huge breakfast. It was the only meal of the day so you had to eat up. Eggs, grits, biscuits, gravy, and of course someone was sure to have popped open a canister of cinnamon rolls. Those were the days. Of course now, being gluten free, Christmas Breakfast has changed quite a bit.

Gooey Cinnamon Rolls

In case you didn’t already know this, gluten free cinnamon rolls are hard to find. They do not make canisters that you can just pop open. I actually hadn’t even had a cinnamon roll since going gluten free until recently, and boy, have I been craving them.

I know a lot of people like the kind with the frosting on top, but I love the ones with gooey caramel. Gooey Cinnamon Rolls are my favorite. They are like heaven, especially when they are warm out of the oven.

Now, I am not a huge fan of any recipe that takes a whole lot of steps. If there is a shortcut that will still get me a good result, I am all for it. When it comes to gluten free cinnamon rolls, I have found the answer.

Enjoy Life Pizza Crust

So easy, so delicous. Plus, the by using the Enjoy Life Pizza Crust, making these little beauties Top 8 allergen free was a breeze!

If you don’t already know, all Enjoy Life products are certified gluten-free and free-from the top 8 most common allergens  (wheat, dairy, soy, eggs, peanuts, tree nuts (including coconut), fish and shellfish). They are also all verified Non-GMO, certified Kosher and Halal, and are made with no artificial ingredients.

That is a ton of goodness. All the baking mixes (including the Pizza Crust) are also certified vegan, made with a blend of ancient grains and contain 5 grams of plant-based protein. You can read more about ingredients and nutritional info here.

 Recipe Notes

Honestly, these little babies are easy to make, but there are few little tricks.

Enjoy Life Pizza Crust Mix

Follow the instructions on the package, but you are going to roll the whole thing into a big rectangle, about 12 x 15. Don’t over knead it or it may get tough. If you can’t find Enjoy Life Pizza Crust Mix you can order it online or use another brand. If you use another brand, I can’t guarantee the same results.

Dairy Free Butter

An essential part of any cinnamon roll is the butter. I used Earth Balance Soy Free Buttery Spread and it worked great, but you can feel free to use your favorite dairy free butter.

That’s about it! The only other two things you need are sugar and cinnamon. Doesn’t get any easier than that!

Gooey Cinnamon Rolls- Top 8 Allergen Free

Ingredients

  • 1 box Enjoy Life Pizza Crust prepared as directed on package
  • 6 Tablespoons Dairy Free Butter divided
  • 2/3 cup packed brown sugar divided
  • 1 Tablespoon Cinnamon
  • 2 Tablespoons water

Instructions

  • On stove, melt 4 Tablespoons butter with 1/3 cup brown sugar and 2 Tablespoons water. Stir. Remove from heat when it begins to bubble.
  • Pour caramel mixture into the bottom of a 9 inch pie pan.
  • Roll out pizza crust.
  • Melt remaining 2 Tablespoons of butter and brush over pizza crust.
  • Combine remaining 1/3 cup brown sugar with cinnamon and sprinkle over crust.
  • Tightly roll pizza dough, starting with the long edge.
  • Cut into rounds, about 1 inch each.
  • Place rounds on top of caramel in pie dish.
  • Bake at 400 for 25-30 minutes.
  • Carefully place platter over pie dish and flip to put the caramel on the top of the buns.
  • Enjoy!

    I just finished making a batch of these for the family.. they are delicious! Thank you so much for this fabulous recipe- so easy & wonderful, and I actually have a few boxes of the pizza crust mix and we made it up the regular way a few weeks ago and none of us really liked it as pizza crust! ? BUT as cinnamon rolls the mix is great! I’m so glad it won’t be going to waste but turning into ooey gooey yumminess! I substituted coconut sugar for half of the sugar and used melted coconut oil with a pinch of salt in lieu of the butter. Also, I’m going to add diced pecans to the next batch too- yum!!!
