Medittarean Inspiration
Each month I receive a box full of goodies from American Gluten Free. I love subscriptions boxes because I get to be creative and try things I wouldn’t usually buy at the store. This month there were all kinds of Medittarean themed goodies, and being that I already went to the store this week, I wanted to make a dish with things I already had on hand.
Lemon Tahini Gluten Free Orzo Salad
We don’t usually eat a lot of Mediterranean flavors, but I was excited to try making a pasta salad with the orzo. I like the Andean Dream brand that came in my box because it holds up well, has quinoa flour, and doesn’t use corn, but any gluten free orzo will do.
I made a quick dressing with Tahini. It is so yummy; I would eat the dressing on anything. Garlicky, lemony flavor with a touch of sweetness from white wine vinegar and agave. There is no oil in the recipe, so you save a few calories! A little goes a long way.
Easy Dinner
This meal was super fast to make. I even had a little help from my toddler (mostly she ate the cheese and tomatoes, but it kept her busy!). To serve on the side, I cooked up some chicken that I marinated in a tablespoon olive oil, tablespoon lemon juice, and some Mediterranean seasoning. Quick and easy. If you want something a little different, you could always serve it with a side of my gluten free chicken piccata!
The gluten free orzo salad can be served room temperature or cold. Be sure to save some of the lemon tahini dressing for an extra drizzle!

Lemon Tahini Gluten Free Orzo Salad
Ingredients
Lemon Tahini Orzo Salad
- 1 1/2 cups gluten free orzo
- 1 pint cherry tomatoes cut in half
- 1/2 cup mini fresh mozzarella balls
- 1 cup steamed asparagus pieces about 5 or 6 stalks
- 2 -3 Tablespoons Lemon Tahini Dressing
Lemon Tahini Dressing
- 1/4 cup Tahini
- 3 Tablespoons Lemon Juice
- 2 Tablespoons White Wine Vinegar
- 1 Clove Minced Garlic
- 1 Tablespoon Agave
- 1 Tablespoon Water (to thin sauce
Instructions
- Cook gluten free orzo according to package directions.
- Rinse under cool water.
- Toss with cherry tomatoes, steamed asparagus, and mozzarella.
- Whisk together all Lemon Tahini Dressing Ingredients.
- Add 2-3 tablespoons to the gluten free orzo salad.
- Serve with additional dressing on the side.
