Mango Lassi Popsicles {Gluten Free & Dairy Free}

Mango Lassi Popsicle

I’ll admit- I’m using the term Mango Lassi kinda loosely. A traditional mango lassi popsicle is made of yogurt, mango and cardamom. Kinda like a smoothie. Recently I saw a mango lassi popsicle that used condensed milk, and as I was thinking about it I realized that Cashew Milk Ice Cream kinda reminds me of the flavor of condensed milk.

It’s really sweet (my husband says it tastes like dulce de leche) and it has a really smooth texture. I thought it would make a perfect stand in for condensed milk in a popsicle.

Cashew Milk Ice Cream

My family is not dairy free, but we still love So Delicious Ice Cream products. I love mixing up our ice cream routine with some almond milk or cashew milk ice cream. Plus, we have a dairy free friends so it’s nice to have options for them when they come around.

I think the cashew milk is my favorite. I think it has the creamiest texture. It does tend to be really sweet, so I find that it satisfies my sweet tooth with a lot fewer bites than traditional ice cream. The sweetness was a perfect addition to these mango lassi popsicles.

Quick and Easy

These mango lassi popsicles were a snap to make. I combined the cashew milk ice cream with mango puree, cardamom, and bit of lime juice to offset the sweetness.  I added crushed cashews to the top before sticking the stick in for a little bit of texture.

The hardest part was having to wait for them to freeze! I’m not ashamed to admit that I ate a bit of it before it was frozen. Here are just a few tips to help you make your Mango Lassi Popsicles perfect!

Mango

Depending on where you live Mangoes can be quite expensive. For this recipe, it is perfectly ok to use frozen mango chunks or mango pulp that is sold in the frozen section. I often buy the mango pulp because it is a lot cheaper than buying a mango and it still has all the great flavor and it is just frozen pureed mango, with no extra ingredients.

Cardamom

This may be a bit harder to find, but I got mine in Whole Foods. I used the Whole Foods brand because it was about half the price of the other brands. If you don’t like cardamom, you could leave it out. It will lose the Lassi taste, but it will still be good!

Lime Juice

Because I used the Cashew Ice Cream, which is already sweet, and the mango, which is sweet, I felt like it needed a little bit of acidity. The lime juice is perfect, doesn’t change the flavor, but cuts through the sweetness a bit.

Mango Lassi Popsicles {Gluten Free & Dairy Free}

Ingredients

  • 1/2 cup cashew milk ice cream
  • 3/4 cup mango puree
  • 1/4-1/2 teaspoon cardamom to taste
  • 2 teaspoons lime juice
  • 2-3 Tablespoons crushed cashews

Instructions

  • Combine cashew milk ice cream, mango puree, cardoman, and lime juice in blender.
  • Blend well.
  • Pour into popsicle molds.
  • Top with crushed cashews.
  • Push in sticks.
  • Freeze.
  • Enjoy!

Notes

You can add the cardoman and lime juice a little bit at a time. Taste to make sure that it is perfect for you.

    I love cashew milk, but have never tried the ice cream! I just recently tried Almond Breeze almond milk ice cream and it was amazing.

    Mango lassi is my favorite and seeing it in the popsicle form is even better. Yum. I never used cashew ice cream. Sounds good.
