Turkey Salad with pomegranate and apple, perfect for Thanksgiving leftovers!

I love Thanksgiving. It is probably my favorite holiday. Though it is about family and friends, it isn’t necessarily vital to spend it with your actual family. You can spend it with anyone’s family and your still okay. In my single days I would eat Thanksgiving 3 or 4 times. It’s really easy to do, just go to different houses at different times. The past few years, my husband and I have actually spent it at home, cooking a meal and then setting up our Christmas decorations. We don’t often get days to ourselves, so it’s a really special time. Last year was our first with our daughter and we had so much fun feeding her her first turkey leg!
It’s All About the Leftovers
I don’t know about you, but we purposefully make extra turkey so that we have leftovers. Now the problem with waiting till after Thanksgiving to post recipes for turkey leftovers, is it’s to late. So this year my family bit the bullet and we made our family Thanksgiving early so I could create awesome recipes for all the My Gluten Free Miami readers! You are welcome.
Luckily, my American Gluten Free Box came with all kinds of cool stuff to make a gluten free Thanksgiving, including a great turkey rub. We always brine our turkey (I use an Emeril recipe- get it HERE), but the rub really added a lot of extra flavor to the skin and worked great when I made stock out of all the leftovers.
There are more recipes coming, but this first one is one of my favorites. It’s so simple but has so much flavor.
Turkey Salad with Pomegranate and Apples
This Turkey Salad only has 5 ingredients: Turkey, mayo, pomegranate, apple, and walnut. That’s it. I put it on a gluten free BFree Wrap (thank you FABLogCon for the free coupon!). You could also put it on top of a salad or just eat it with a fork.
The pomegrante gives this nice pop of juicy tartness, balanced by the sweetness of the apple. The walnuts add a great crunch and a bit of extra protein to get you through all that Black Friday Shopping!
Give it a try, you won’t regret it!
- 1 Cup Chopped Turkey
- 1/4 Cup Mayo
- 1/4 Cup Pomegranate Seeds
- 1/4 Cup Chopped Apple
- Handful Chopped Walnuts (optional)
- Gluten Free Wrap or Gluten Free Bread
- Mix together all ingredients (except wrap or bread).
- Salt if needed (see note).
- Put turkey salad on gluten free bread or gluten free wrap and enjoy!
We brine our turkey and it doesn't need any added salt. Feel free to add salt and pepper to taste.
