Cookie Love

Oatmeal cookies are a favorite around here. Well, really all cookies, but I love oatmeal ones because they kinda feel like I’m sneaking in a little something healthy. They do have oatmeal of course!

Anytime I can sneak in cookies for breakfast (like with these Oatmeal Cookie Overnight Oats) it’s a win. This individual apple cinnamon gluten free mug cake is perfection. It only takes a couple of minutes to whip up, a few in the microwave, and bam- the perfect little gluten free coffee cake.

I especially like treats like this on those rare mornings I have a few minutes to myself. The little bits of cookie streusel and bites of apple are absolute perfection.

Oatmeal Cookies

If you are a celiac or have a gluten sensitivity it is important to know that just any oatmeal cookie is not gluten free. Make sure that they are certified gluten free. Even though oats are naturally gluten free, they often have high levels of cross-contamination.

My favorite gluten free oatmeal cookies are Goodie Girl’s Oatmeal Raisin. They are just the right amount of sweet, and have a nice crunch. I have to hide them from my daughter! She loves them. Apple Cinnamon Gluten Free Mug Cake

I tested this recipe out multiple times trying to get the ratios just right. It’s moist, but still has that slight denseness that you want from a gluten free coffee cake.

If you aren’t a huge fan of cinnamon, you can omit it and it is still delicious. I tried it!

For gluten free flour, I used GF Jules, which does contain xanthan gum. It’s my favorite blend. If your flour blend does not already contain it, you may want to try adding it, but it is such a small cake, it shouldn’t be necessary. As soon as I get my hands on some other gluten free flour I will give it a try!

What really makes this gluten free mug cake is the streusel. Any good gluten free coffee cake is going to have streusel and Goodie Girl’s Oatmeal Cookies are perfect for this. You get a bit of cookie in every bite!

Apple Cinnamon Gluten Free Mug Cake

Ingredients

Cake

  • 1/4 cup gluten free flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 2 Tablespoons sugar
  • 1 egg
  • 1 Tablespoon melted butter let cool before mixing
  • 2 Tablespoons milk
  • 2 Tablespoons finely chopped apple

Streusel

  • 1 teaspoon brown sugar
  • 1 Tablespoon melted butter
  • 3 small gluten free oatmeal cookies crushed

Instructions

  • Mix together cake dry ingredients.
  • Separately mix together cake wet ingredients,
  • Combine and mix until no lumps.
  • Fold in chopped apple.
  • Combine all streusel ingredients.
  • Reserve one Tablespoon streusel for topping.
  • Fold remaining streusel into batter.
  • Pour into greased mug.
  • Top with reserved streusel.
  • Microwave for 3 minutes.

    I can’t tolerate oats is there anything else I could use in its place? I haven’t had an Apple Strudel since my celiac diagnosis 5 years ago & it was one of my favorite treats, I miss it so much!
