Gluten Free Drop Biscuits

I am always looking for ways to stretch dinner. We often have company drop in at the last minute and I am never one to turn away people at dinner time. Sometimes dinners already made and I need something to make the meal go a little further- drop biscuits are great, delicious way to stretch a meal.single bacon cheddar chive biscuits

They are also just plain delicious. I love drop biscuits. So easy to make- no rolling, no kneading, just mix them up and put them in the oven. I love eating gluten free bread for dinner, but I’m always short on time. Drop biscuits are the answer.

Ryze Gluten Free Flour

Ryze Gluten Free Flour Blend

For this biscuit recipe, I used Ryze Gluten Free Flour Blend. I have been hearing great things from fellow gluten free bakers about Ryze’s great rice flour blend, but this was the first chance I had to experiment with it. It is made only of rice, with no added gums.

It worked wonderfully. I was really impressed with the final texture and how it didn’t have any grittiness that is typical of gluten free baked items.

Bacon, Cheddar & Chives

Is there a better combo than bacon, cheddar, and chives? It’s like heaven, and these gluten free drop biscuits are packed full of them. With a full cup of shredded sharp cheddar cheese (use the thick cut, not the fine!) and 1/2 a cup of crumbled bacon, each bite is packed with flavor.

The chives give it a nice bite to round out the flavor and I added some minced garlic to bring out the flavor profile even more. These gluten free biscuits are easy to whip up.

After mixing in your dry ingredients, work in a few tablespoons of butter.

Then add in the best parts- the cheddar, chives, and bacon.

After that, an egg and some milk.

Mix it all together.

Drop it on a pan and into the oven!

I love recipes that are easy. These gluten free drop biscuits take just a few minutes to mix up and then about 18 minutes to bake. Easily can be made from start to finish in under 30 minutes.

They are the perfect accompaniment to any meal.  We love them on the side of Gluten Free Chicken Piccata or Easy Spaghetti and Meatballs. A gluten free drop biscuits will add a special touch to just about any meal.

  • 2 cups gluten free flour (I use Ryze Gluten Free Flour Blend
  • 1 1/2 teaspoons gluten free baking powder
  • 1/2 teaspoon salt
  • 3 Tablespoons softened butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled bacon
  • 2 Tablespoons chopped chives
  • 2 teaspoons minced garlic
  • 1 egg
  • 1 cup milk

  1. Preheat oven to 400 degrees.
  2. Mix together gluten free flour, baking powder, and salt in a bowl.
  3. Work in butter with a fork or pastry cutter until crumbly.
  4. Mix in cheese, bacon, chives, and garlic.
  5. Add egg and milk. Mix well.
  6. Divide into 12 portions on parchment paper lined baking sheet.
  7. Bake for 18-20 minutes.

  1. Oh my heavens, I need to make these. My husband eats gluten free and would be so happy! Believe it or not, this is a pretty easy one to make dairy-free. I don’t always recommend just swapping in dairy-free cheese alternative, but it actually bakes quite well in breads 🙂

    • So good…I always wonder about using dairy free cheese, replacing milk and butter is usually easy, but cheese is always tricky for me. You will have to let me know if you try it!

    • You can actually leave the egg out, it helps them hold their shape, but I did try them without the eggs and they were still pretty yummy. Haven’t tried them dairy free yet, but hopefully they will be yummy!
