Cookie Exchange
Nothing says holidays like a cookie exchange. I’m always looking for great new recipes to share, and this one is always a hit. Instead of baking cookies, I actually crunch them up and fold them into this easy, smooth creamy fudge. It is a snap to make, and always the first to go from the cookie plate.
I know the traditional rocky road has nuts, but the minty cookies provide that same crunch and who doesn’t love marshmallows? I swear we ate half a bag of marshmallows while we were making this!
Minty Goodness
While I love Goodie Girl Mint Slim Cookies anytime of year, I especially love their minty goodness during the holidays. Something about that cool mint flavor just screams winter. I’ve used them as a pie crust for a peppermint pie, and even in a minty milkshake for those of us whose winters temps don’t go under 80 degrees!
Adding them to this Rocky Road Fudge totally takes it to the next level. I have lots of friends who don’t care for nuts and the addition of Goodie Girl Mint Slims brings that perfect crunch, plus who can argue with the addition of more chocolate!
Easy, Microwaveable, Rocky Road Fudge
Holidays are always a busy time, and I’m sure I’m not the only one looking for recipes that are quick and simple to make. This rocky road fudge takes about 10 minutes to throw together and just a little bit of time in the fridge to set. It doesn’t get any easier than that.
The actual fudge itself only has 3 ingredients chocolate chips, condensed milk, and butter. Then just add the chopped cookies and marshmallows!
Fudge just doesn’t get any easier than this!

Easy, Rocky Road Fudge (Gluten Free)
Ingredients
- 12 ounces gluten free chocolate chips
- 2 Tablespoons melted salted butter
- 1 can sweetened condensed milk
- 1 cup chopped mint thin cookies
- 2 cups mini marshmallows
Instructions
- Combine melted butter, chocolate chips and sweetened condensed milk in a microwave safe bowl.
- Microwave at half power for 1 minute and 30 seconds.
- Stir.
- Microwave at 30 second intervals at half power until melted.
- Stir vigorously until well combined.
- Fold in cookies and marshmallows.
- Spread into a pan lined with parchment paper or foil.
- Chill until set.
