Taco Love
If I had to pick only one food to eat for the rest of my life, it would be Tacos. Hands down my favorite. I could eat tacos every day. Tacos are the best food on the planet. Breakfast tacos, chicken tacos, steak tacos, tacos al pastor….so many kinds of tacos! One of my favorite things about tacos is they are easy to make gluten free. Who doesn’t love a corn tortilla piled high with goodies?
My love of corn tortillas comes from spending a good part of high school going back and forth to Mexico (watch out for my Tostadas Aztecas recipe coming soon!) and spending part of my college years living in Mexico. I’m not talking about the beach resort towns. I was up in the mountains, mostly in small villages, where good, hand made corn tortillas are plentiful!
I digress….we aren’t making corn tortillas today, we are just buying them and putting all kinds of deliciousness on top. Now, if you are looking for a Grain Free and Vegan Tortilla, Allergy Free Alaska has a really easy recipe that would be great with these!
Mail Call
Every month I get all sorts of goodies in the mail. I love shopping online, and I LOVE getting mail (side note…if you are buying online, make sure you are using Ebates!). My two-year-old is even in on it. We get so many packages; she thinks it’s Christmas almost every day.
Two of my favorite subscription plans are Butcher Box and American Gluten Free. On top of the surprise of getting neat packages, I also love to use my items to meal plan. This month I got some organic chicken tenders in my Butcher Box and Two Snooty Chefs Jamaican Jerk Seasoning in my American Gluten Free Box (it was island theme…so fun!) so of course I immediately thought, why not make some Gluten Free Jamaican Jerk Chicken Tacos!
Gluten Free Jamaican Jerk Tacos
These Gluten Free Jamaican Jerk Tacos were super simple. I just rubbed my chicken tenders with the seasoning and put them in the fridge for the afternoon. A bit of shredded cabbage (I love cabbage on tacos), some queso fresco, and a drizzle of spicy mayo.
Why spicy mayo and not sour cream? The answer is simple. My husband hates sour cream. Honestly, though, the spicy mayo takes these tacos over the top, and it’s so simple to make.

Some Notes about Butcher Box and American Gluten Free
Butcher Box
If you haven’t tried Butcher Box, it’s an excellent way to get the best meat, shipped straight to your door. I know getting organic meat seems like it would be pricey, but we are eating better and saving money. We get one box and usually a few add-ons like an extra pack of bacon or some beef bones (hello Insta Pot Bone Broth!), the total cost is about 150 a month, and it is all the meat we need. As a reference, it feeds our family of 2 and a half, plus my husband’s best friend who eats with us a couple of times a week.
American Gluten Free
American Gluten Free is a monthly subscription. I get the Foodie Box. It is $35.00 a month. (I think there is a discount if you sign up for several months at a time.) It comes with all kinds of cool things that you can use to make meals. This month had rice, garlic sauce, jerk seasoning, mariquitas (plantain chips), banana flour, and more. It is ideal for assisting with meal planning. At Thanksgiving, they sent everything you could need for an excellent gluten free Thanksgiving. If you haven’t tried it, take a look at their website and some of their past boxes. I am big on eating well and doing it frugally, and I find that American Gluten Free has been a great investment.
