I am a Food Network junky. I could watch cooking shows all day long. Sometimes I do. While I rarely try the recipes (most aren’t gluten free), I get lots of ideas about cooking techniques and recipes. A long time ago the Barefoot Contessa did a panko crusted salmon. It looked easy and delicious, but my husband hates mustard, so I just kinda forgot about it, until recently.

I grew up eating a lot of seafood.  Mahi mahi, grouper, catfish, lobster, shrimp…we ate it if it came out of water. Even though salmon isn’t local, it’s still a favorite. It is not secret that salmon is good for you—packed with protein, high in Omega 3 fats and essential minerals. It is easy to prepare and can be on the table in just over 30 minutes.

Easy Lemon Dill Sauce

You may remember my 5 Ingredient Easy Lemon Dill Sauce. It is so easy to make and packed with flavor. I started thinking about how great it would be with salmon. Then I thought, why not use this in place of mustard in the Panko Crusted Salmon recipe from Barefoot Contessa , use gluten free bread crumbs, and add some herbs. The easy lemon dill sauce is superb on its own, but it takes the salmon to the next level! The cast iron cooking technique is so simple. Chances are you have many of the ingredients needed in your pantry to make this Gluten Free Lemon Dill Panko Crusted Salmon already!

Gluten Free Lemon Dill Panko Crusted Salmon

This dinner is way easier than you would think. Not even 30 minutes from prep time to the table. You will need salmon fillets, my 5 Ingredient Easy Lemon Dill Sauce, gluten free breadcrumbs, lemon zest, dill and a few pantry items. I promise this won’t take your whole evening.

Start by heating the oven to 425 F and mix up a batch of the Easy Lemon Dill Sauce, if you don’t already have some on hand.

Mix the gluten free breadcrumbs (there are quite a few good brands available at the supermarket and Amazon!), dill, lemon zest, salt and pepper in a small bowl, then add the olive oil. Place the salmon fillets skin side down and coat liberally with the lemon dill sauce. This will adhere the crumbs to the fish. Press the crumb mixture on the fish.

Break out your trusty cast iron skillet (12 inch) or other heavy, ovenproof pan. If you don’t own a cast iron, treat yourself to one. They are fantastic!

Add the cooking oil and heat over medium heat. Place the salmon skin side down in the hot skillet and sear, without turning, for 3-4 minutes. Pop the pan into the hot oven for 5-7 minutes (don’t overcook.) Remove from oven, cover pan with foil and let sit for 5-10 minutes.

Gluten Free Lemon Dill Panko Crusted Salmon

Ingredients

  • 4-6 salmon fillets
  • salt & pepper
  • 1 recipe Easy Lemon Dill Sauce
  • 2/3 cup gluten free bread crumbs
  • 2 Tablespoons chopped dill
  • 1 teaspoon grated lemon zest
  • 1/2-1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 Tablespoons Olive Oil
  • Oil for pan

Instructions

  • Preheat oven to 425.
  • Mix together gluten free bread crumbs, dill, lemon zest, olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  • Sprinkle salt and pepper over salmon fillets.
  • Spread about 1 tablespoon Lemon Dill Sauce over each fillet.
  • Divide breadcrumbs on top of fillets and press to adhere.
  • Heat 1-2 Tablespoons oil in a cast iron skillet (or other oven proof pan) on stove over medium heat.
  • Place fillets skin side down and cook for 3-4 minutes. Don't turn them.
  • Place pan in oven for 5-7 minutes or until done.
  • Remove from oven, cover with foil and allow to rest for 5 minutes.
  • Plate and enjoy!

    I grew up on a farm and until a few years ago I was nervous about cooking fish. Salmon is a great place to start and so is this recipe! It looks super easy and delicious.
