First Love

Snickerdoodles are probably my favorite cookie of all time. I just love the soft inside and then crispy outside with a burst of cinnamon flavor. I make snickerdoodles every Christmas. 6 Christmas ago I was just starting to date my hubby and hadn’t yet met his family. I sent a bunch of snickerdoodles with him to his parents and won them over. The first time I met his dad, he asked,

“Is this the girl who made the cookies?”

I won over his dad with cookies! From then on we made them for any special family event.

Gluten Free Peppermint Snickerdoodles

American Gluten Free DecemeberI have been wanting to try something a bit different with my snickerdoodles for a while and when I got my American Gluten Free Box (read more about it HERE) and saw the Orly Blends flour and the sugar crystals I felt inspired. I was already in a peppermint mood after my No-Bake Mint Slims Peppermint Pie, so I thought why not take it to the next level.

I usually use GF Jules flour in everything, but since I had the Orly blend (this isn’t sponsored, I just had it on hand) I thought I’d give it a shot. It worked great. No one could tell the cookies were gluten free. There was no grainy texture. If you can’t have corn these flour blends are a great option. It was really awesome to get a whole bag in my American Gluten Free box and not just a sample.

Peppermint Goodness

This recipe is really easy and should work well with any 1:1 gluten free flour blend as long as the blend is not bean based. I used a peppermint oil, though I’m sure you can use peppermint extract.

The hardest thing about these cookies (if you can even call it hard) is the crushed candy canes. They will stick together a bit once they are crushed. The best way I found to combat this was to crush them in the food processor with the sugar crystals. I would just take out a little at a time so I could pulse them to loosen them up.

Gluten Free Peppermint Snickerdoodles

Ingredients

  • 1/2 cup butter or dairy free butter like Earth Balance buttery bars
  • 1/2 cup shortening
  • 1 and 1/2 cups sugar
  • 1 teaspoon pure peppermint extract
  • 2 eggs
  • 2 and 3/4 cups gluten-free all-purpose flour I have used GFJules and Orly London Blend- both contain Xanthan gum
  • 2 teaspoon cream of tartar
  • 1 teaspoon gluten free baking soda
  • 1/4 teaspoon salt
  • 2-3 finely crushed candy canes
  • 1/4 cup sugar or white sugar sprinkles I used Imperial Sugar Crystals

Instructions

  • Cream together butter, shortening, sugar, peppermint extract, and eggs until light and fluffy.
  • Add gluten free flour, cream of tartar, baking soda and salt.
  • Beat until combined.
  • Roll into one inch balls.
  • Roll balls into the mixture of candy canes and sprinkles.
  • Bake at 375 for 8 to 10 minutes.

    I just made these cookies as a request for my daughter who loves peppermint. They are great! The kids are not fans of gluten free anything but they didn’t notice that they were gluten free. They were not grainy – just a nice soft middle with a hint of crispness on the edges -great. The husband liked them too. They were not too sweet and the contrast between the soft cookie and crunchy candy cane topping was nice. Next time I will add a bit more peppermint extract as my family is a huge fan. Thanks for a great recipe!
