Ice Box Cake

Until recently I had never heard the term “Ice Box Cake”, I had seen layered desserts, but didn’t realize these yummy, make ahead delights had a name all to themselves.

The number one characteristic I noticed in Ice Box Cake is that they are usually made with graham crackers. I happened to have a few boxes of Schar Gluten Free Chocolate Honeygrams on hand, thus the Tiramisu Ice Box Cake was born.

I love the flavors of Tiramisu. The tangy mascarpone cheese with chocolate and coffee. One of the best desserts ever! This version is simple and quick to put together. You can make it the day before and pull it out whenever you are ready!

Chocolate Honeygrams

The Schar chocolate honeygrams are perfect in this recipe. The combo of graham and chocolate is fantastic, but the chocolate layer also helps the grahams from getting soggy. They maintain just the right texture.

These honeygrams are dipped in 29% dark chocolate and made with real honey.

The flavors and textures in this Tiramisu Ice Box Cake are to die for. So simple to put together, you basically just layer the ingredients and refrigerate it until you are ready to eat.

The trick to really imparting that tiramisu flavor is soaking the chocolate covered honeygrams in espresso. Not soaking like you do in a regular Tiramisu, but brushing (or mopping with a paper towel when you can’t find your basting brush) espresso over them, before adding your mascarpone filling.

The filling itself is super easy to make. A combo of sweetened whipped cream and mascarpone combine for a light and fluffy center. If you don’t have access to mascarpone (or it is just too expensive at your store), cream cheese can be substituted.

  • 8 ounces softened mascarpone cheese
  • 2 cups heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1/4 cup espresso or strong coffee
  • 30 chocolate covered honeygrams squares (15 regular sized graham crackers) (I used Schar Chocolate Covered Honeygrams

  1. Beat softened mascarpone cheese until fluffly. Set aside.
  2. Beat 2 cups heavy cream with sugar and vanilla, until soft peaks form (basically until you have whipped cream).
  3. Reserve 1 cup of the whipped cream for topping.
  4. Fold remainder of whipped cream into mascarpone cheese.
  5. Layer honeygrams in 9x9 baking dish.
  6. Brush with espresso.
  7. Spread 1/2 of the mascarpone mixture over grams.
  8. Layer with another layer of grams.
  9. Brush with espresso.
  10. Spread remaining mascarpone mixture.
  11. Layer with another layer of grams.
  12. Brush with espresso.
  13. Top with reserved whipped cream.
  14. Top with cocoa powder.
  15. Refrigerate at least two hours or until ready to eat.
